This one is called La Peineta because it looks like the type of combs that are used to hold a woman’s hair in place. Much Pan Dulce is named after an object that the bread may look like. The names go from silly to weird to double-entendre-ish to obscene.
At La Panadería we have two types of Peinetas. One has a delicate sweet cream. The other has cajeta (or leche quemada). Cajeta is a close cousin of caramel but thinner in consistency and tastier.
